A procedure manual is a document that spells out every detail on how your business works. In fact you could break your manual down into different sections that are applicable to different sections of your business. For example you could have a management manual, a technical procedure manual, and marketing manual, and a financial manual. These are just for examples of some of the areas of a typical business. As your business grows each department would have its own manual.
A manual is an excellent way for new staff to learn the skills quickly. It also alleviates other staff and yourself having to answer repeated questions.
